A Christmas tradition. Yule log cakes always look so beautiful. It can be a lot of fun to frost them and decorate them elaborately with whatever design you see in baking magazines or on Pinterest, but this cake doesn’t have to be difficult. Like everyone, I get super busy around the holidays between gift shopping, Christmas parties, and other holiday baking. However, I know I always have to make a yule log cake every year.
This recipe is super easy and goes over all the steps to create a beautiful cake without spending a lot of time on it. ( I mean it is a cake still, so there is still a time commitment….). This recipe even uses a boxed cake mix so you’ll be back to your other holiday festivities in no time!
Easy Yule Log Cake
Ingredients:
- 1 Box Cake Mix
- 3 Eggs
- 1/3 Cup Vegetable Oil
- 1 1/4 Cup Cream Soda
- 1 Can Vanilla Frosting
- 1 Can Chocolate Frosting
Directions:
1.Preheat oven to 350 degrees. Line a 15×10 inch edged jelly roll pan with parchment and grease the sides.
2. Prepare the cake batter according to the directions on the box. The eggs, oil, and cream soda measurements are just what my box called for. For an extra moist and fluffy cake, substitute cream soda for the water.
3. Pour batter on to the parchment lined pan and smooth out to the corners.
4. Bake 20-25 minutes or until a toothpick comes out clean.
5. Immediately when the cake comes out of the oven remove from the pan on to a wire cooling rack. Lightly dust the cake with powdered sugar and cover with a clean towel. Dust the towel with powdered sugar as well. Starting with one of the shorter ends, begin rolling the cake up with the towel. Careful the cake will be very hot!
6. Allow cake to cool on the wire cooling rack. (There is a cake in there I promise!)
7. Once the cake has cooled, carefully unroll it and remove the towel. Frost the middle of the cake with a thick layer of vanilla frosting. Roll the cake back up.
8. Frost the outside of the cake with chocolate frosting and decorate to look like a log. I usually leave the ends of mine un frosted. The best way to do this is to first frost a thin layer. It doesn’t have to look perfect and it will probably have crumbs in it. If you have any cracks in your cake, this is a great time to fill them in with frosting. Let this sit for 10-15 minutes before frosting with a thick layer. This way the crumbs are stuck in the thin layer and your thick layer comes out looking pretty and crumb free. Next take a toothpick or butter knife to lightly make lines along the cake to make it really look like a log. I dye some of my left over vanilla frosting green to add some leaves and cinnamon imperials (Red Hots) make perfect little berries!
