I first found a recipe for Margarita Cookies on Pinterest (of course). I decided to give it a try because I was looking for something to make for my friend Sarah’s 21st birthday. Since then, I have tried two separate recipes for Margarita Cookies but then I decided to create my own recipe and now I stand by it. While the other recipes did taste like margaritas, they didn’t have nearly enough tequila in them… and lets face it, that’s the best part!
The real directions for the recipe is below, but the first thing I always do when I set out to make these is to break out the blender, grab some ice and make myself a margarita. Baking is hard work isn’t it?
- 3/4 Cup Unsalted Butter (Softened)
- 3/4 Cup Granulated Sugar
- 1 Egg
- 2 Tablespoon Tequila
- 1 Teaspoon Baking Powder
- 2 3/4 Cup All-Purpose Flour
- Lime Green Food Coloring (optional)
- 2 Teaspoons Lime Zest
- 1 Tablespoon Lime Juice
- 1 Can Vanilla Frosting
- 2 Tablespoons Tequila
- 1 Cup Powdered Sugar
1. Preheat oven to 350 degrees.
2. Cream butter and sugar until fluffy. Mix in tequila, lime juice and lime zest. When it comes to choosing a tequila it’s up to you. I usually stick with the gold Jose Cuervo, the flavor comes out nice and there no sense in buying something top shelf to bake into a cookie.
3. Add egg, mix until combined. Mix in food coloring. ( I use one drop of Wilton’s lime green color.)
4. Next, mix in baking powder and 1/2 the flour until thoroughly combined. Add in remaining flour.
6. Once dough is combined, allow to chill for 30 minutes.
5.Roll out dough 1/4 inch thick on a lightly floured surface. Cut out into shapes using a cookie cutter.
6. Bake cookies at 350 degrees for 6- 9 minutes. The edges will turn lightly brown. Allow to cool on wire rack.
7. Once cookies are cooled, combing frosting tequila and powdered sugar. I added the powdered sugar to balance out the additional liquid I was adding. If you add too much tequila (is there such a thing?) you can add in more powdered sugar. Also, if you would prefer a thinner glaze drizzled over the cookies, you can leave out the powdered sugar and just add tequila until the desired consistency. I have made these cookies both ways in the past.
8. Frost cookies. As soon as you frost them, sprinkle lightly with sea salt. the salt really completes the margarita taste!
